Course Content
Thursday 30 August - Sauces & Relishes £80.00
Prepare a variety of sauces and relishes to include:
Bagna Cauda: anchovy, garlic and butter sauce.
Pesto Sauce: basil, garlic, pinenuts and parmesan. Add to pasta dishes. Keeps well.
Caribbean Creole Sauce: tomato, onion and peppers in a white wine sauce. Delicious with fish or chicken.
Friday 19 October - Skills with Fish £100.00
Sardine Escabeche: filleted sardines in a red onion, honey and herb marinade. A good starter or served with pasta.
Salmon Rillettes: aromatic salmon starter in a wholegrain mustard sauce.
Fish Parcels: spicy haddock, chilli and coconut parcels.
Monday 22 October - Pastries & Cakes £80.00
Pizza Tart: light pastry base filled with tomatoes, pepperoni and mushrooms. Topped with cheese.
Coffee Eclairs: choux pastry filled with cream and topped with coffee icing.
Whole Orange Cake: light orange, almond and spiced chocolate cake.
Tuesday 23 October - Vegetarian Dishes £80.00
Warm Chick Pea Salad: medley of vegetables, herbs and feta cheese in a salsa.
Walnut Fettucine: pasta in a walnut, watercress and lime sauce.
Rogan Josh: gently spiced vegetable curry.
